Sunshine Scoop Shoppe & Bakery

Carole Fawaz hopes she’s found a sweet niche in the DeKalb community with her new business, the Sunshine Scoop Shoppe & Bakery.
Aside from a selection of more than 30 flavors of ice cream, the shop offers made-to-order ice cream cakes and ice cream sandwiches, homemade pies and even offers delivery.
Fawaz owns and runs the shop with her family and husband, Brian. The shop, located in the Junction Shopping Center at 818 W. Lincoln Highway, is housed in the former Baskin-Robbins location and has been open under new ownership for about three weeks.
Fawaz said she’d always wanted to own a business, and she wanted to open the ice cream shop in DeKalb because that’s where she grew up.
“I wanted a fun business that I can grow and be a part of my family,” she said. “I’m already proud of it even though we’ve only been open for three weeks.”
Customers can sample the 32 flavors of premium Hershey ice cream, such as birthday cake, cotton candy and peanut butter caramel cookie dough.
“We tried a lot of different ice creams” before settling on Hershey, Fawaz said. “We wanted to make the right choice.”
She and her husband liked the flavor of Hershey ice cream because the butterfat content is higher than store-bought ice cream, which is right around 10 percent. The Hershey ice cream has 12-16 percent butterfat content. The ice cream also is loaded with fresh ingredients, such as real strawberries, real mango pieces and actual cheesecake.
The Sunshine Scoop Shoppe & Bakery also serves frozen yogurt, as well as the no-sugar-added flavors of vanilla, turtle sundae and butter pecan. Fawaz said eight flavors of Italian ice are coming soon.
Fawaz also serves ice cream in specialty pretzel, Oreo, chocolate chip cookie or M&M cones that she says are unique to the area. Waffle cones dipped in chocolate also are available with sprinkles, nuts and gummi bears. Milk shakes, real fruit juice smoothies, floats with Dog ‘n Suds root beer and Green River soda, slushies and blended coffee drinks also are on the menu.
Ice cream lovers with a big appetite also can try the Belly Buster Challenge. If one person can eat 15 scoops of ice cream, topped with whipped cream, cherries and nuts in less than 20 minutes, the dessert is free and the challenger’s picture is added to the Sunshine Scoop Shoppe & Bakery website.
The shop has ready-made cakes and pies that can be delivered or picked up on the same day they’re ordered, or customers can create their own ice cream cake or pie.
The shop serves classic apple, cherry, pecan and strawberry rhubarb pies, along with specialty ice cream pies such as cookies and cream, cappuccino and mint chocolate.
The Sunshine Scoop Shoppe & Bakery is available for catering and helping out with fundraising events for area organizations.
Fawaz hopes customers walk away feeling happy above anything else.
“When I think of sweet, it just puts a smile on my face,” she said. “It’s a fun business, a happy business. It’s brought a lot of joy to us.”
